What is Xanthan Gum?


Xanthan gum is a polysaccharide with many industrial uses, including as a common Food Additive. It is an effective Thickening Agent and stabilizer to prevent ingredients from separating. It can be produced from simple sugars using a fermentation process, and derives its name from the species of bacteria used, Xanthomonas campestris.


Xanthan gum is a high molecular weight polysaccharide gum produced by a pure-culture fermentation of a carbohydrate with strains of Xanthomonas campestris, purified by recovery with ethanol or propan-2-ol, dried and milled. It contains D-glucose and D-Mannose as the dominant hexose units, along with D-glucuronic acid and pyruvic acid, and is prepared as the sodium, potassium or calcium salt. Its solutions are neutral.

Product Property


Light yellow to white flowable powder with a slight odor. It is easily soluble in cold and hot water, neutral in solution, resistant to freezing and thawing, and insoluble in ethanol. It is dispersed and emulsified in water to form a stable hydrophilic viscous colloid.
