What is Thaumatin?


Thaumatin is a low-calorie Sweetener and flavour modifier and widely used as Food Additives. The protein is often used primarily for its flavour-modifying properties and not exclusively as a sweetener. The thaumatins were first found as a mixture of proteins isolated from the katemfe fruit(Thaumatococcus daniellii Bennett) of west Africa. Some proteins in the thaumatin family of Sweeteners are roughly 2000 times more potent than sugar. Although very sweet, thaumatin's taste is markedly different from sugar's. The sweetness of thaumatin builds very slowly. Perception lasts a long time, leaving a liquorice-like aftertaste at high usage levels.

Thaumatin application


1. Non-calorie sweetener and Flavoring agent. For general food and health food. It is suitable for use with sugars such as sucrose in coffee, chocolate, gumdrops, beverages, cold drinks, desserts, bakery products, etc.

2. It can improve the bitterness of certain Amino Acids, the astringency of tannins, and the bitterness of caffeine, enhance the flavor of dairy products and cocoa, and can also enhance the effect when used in spices.

Thaumatin is highly water soluble, stable to heating, and stable under acidic conditions.
